Easy Kale Salad

Loaded Kale Salad

Unpopular opinion coming in hot…

Salad is freaking amazing & the reason so many people “hate it” is because most people aren’t sure how to properly make it.

Someone had to say it, right? 😅

I feel like so many people think that the way you make salad is by tossing lettuce into a bowl, putting croutons and a bunch of dressing on it, and calling it a day.

If I’m right, it’s no wonder so many people hate salad!

Salad doesn’t have to be boring at all (and this kale salad I’m about to throw your way is anything but boring).

You really only need a few ingredients to make a damn good kale salad – kale (of course), a lemon, olive oil, and some salt & pepper (totally optional).

Rinse and dry one (or two) bundles of kale. Then, pick the kale leaves off of the stalk and using a knife, chop your kale into bite-sized pieces.

Add your kale to a large bowl and drizzle olive oil and lemon juice. Massage the kale for about 3-5 minutes. Massaging kale helps break down the tough cell structure and removes some of the bitterness. It’s also a lot easier for you body to digest and makes for a more appealing, tender salad.

At this point, I add in Swiss chard, spinach, fresh herbs, or really anything I have in the fridge that’s leafy! Give it a gentle toss and drizzle your dressing onto the salad mix. Now, move on to the toppings (one of my favorite parts 🤤).

Cucumber, nuts, goji berries, sprouts, broccoli, peppers, croutons… the list goes on and on! I’ll use pretty much what I have on hand that would taste good with my salad dressing.

If you’re using balsamic vinaigrette, some fresh fruit (like apples, pears, or strawberries) and nuts would be an awesome addition.

If you’re using ranch dressing, vegetables like tomatoes, carrots, and broccoli would be a good choice.

I used a vegan Caesar salad dressing and topped it with goji berries, broccoli, cucumbers, kale sprouts, and croutons.

This is the time where you can play around with your kale salad! Mix a few random things together and see how you like it. Get as creative as you want here 😊

I really hope you give this kale salad a chance – it’s far from boring, doesn’t take long to make at all, and tastes amazing.

I can’t wait to hear how you dressed your kale salad!
